Dry  Bold  Spicy

New England grapes surprise with rich tannin structure and loads of pepper on the palate.  Big & bold, savory, dark fruit and peppery finish.
Pair With: Fine steak & other grilled meats.

Winemaking Notes:
First year produced: 2010, released in September 2011
50% Cabernet Franc, 50% Noiret. 
Infused with French oak (cubes) up to 5 months
Can be bottle-aged up to 10 years
Acidity: 3.3 PH
Residual Sugar: < 1%
About Cabernet Franc:  Cabernet Franc (along with Sauvignon Blanc) is one of the parent grapes of Cabernet Sauvignon. It produces wines similar in style to the more famous Cabernet Sauvignon, but lighter bodied, with less tannin and more aroma.  It can have herbaceous (green pepper) aromas.
About Noiret:  Moderately cold-hardy grape created from a complex cross in 1973 at Cornell University and it withstands temperatures to -14 degrees F. Noiret produces wines with a deep red color, good tannins, and unusually robust pepper overtones.
